After training in Tosa, Yoshizawa Norifumi, who now has a workshop in Kawagoe, a small Edo town, is a blacksmith with an unusual background as a former professional chef. With an intimate knowledge of the fibers of ingredients, the knives he forges are not only sharp, but also feature an exquisitely balanced center of gravity and handle shape that makes them comfortable to use for long periods of time. Inheriting the spirit of "field blacksmiths" who pursue the possibilities of iron without being bound by form, he continues to create knives that are deeply in tune with the sensibilities of the user.
Honing his skills in the renowned Tosa forging tradition and now based in historic Kawagoe, Norifumi Yoshizawa brings a rare advantage to his anvil: the perspective of a professional chef. His deep understanding of ingredients allows him to craft blades with exceptional balance and intuitive handling, designed to minimize fatigue during long hours of prep work.
